The mistake almost every Gulmarg itinerary makes is treating it as a day trip from Srinagar. It is a two-hour drive each way, the gondola queue is unpredictable, and the weather turns without much warning at that altitude. Squeeze it into one day and you spend most of it travelling and queuing, which is precisely the opposite of a honeymoon.
Staying a night in Gulmarg fixes this. You get the mountain early before the day-trip crowd arrives, you have a second chance if phase two is shut for weather, and the evening at altitude with snow outside is a genuinely different experience from returning to a Srinagar hotel. The winter package is built this way for exactly that reason.
On the gondola itself: it runs in two phases and they close independently, most often phase two, and most often in the weather people specifically travelled to see. We build the itinerary so a closure is a disappointment rather than a ruined day, and we will always tell you the current status before you set out rather than letting you find out at the station.

If snow is the point of your honeymoon, yes. You get the gondola before the crowds and a second chance if it is closed for weather — which happens often enough to plan for.
No. It runs in two phases and either can close for weather or maintenance, phase two most commonly. We check status before you travel and build the day so a closure is not a write-off.
Nobody can guarantee snow, and be wary of anyone who does. January and February are the most reliable months by a wide margin; December varies year to year and March is a gamble.
Genuinely warm layers, waterproof outer shell, gloves and proper footwear with grip. Snow boots and heavy jackets can be hired locally at the resort, which is often more sensible than flying with them.
